Sweet Hawaiian Crockpot Chicken


Ingredients:

2 lbs (900 g) boneless, skinless chicken breasts
1 can (20 oz / 560 g) pineapple chunks (with juice)
½ cup brown sugar (packed)
⅓ cup soy sauce (low sodium preferred)
2 cloves garlic, minced
1 tablespoon cornstarch (optional, for thickening)
2 tablespoons water (if using cornstarch)
1 small onion, sliced (optional for extra flavor)
Salt and pepper to taste
Cooked rice, for serving
Chopped green onions or sesame seeds (for garnish)

Instructions:

Prepare the crockpot: Lightly grease the inside of your crockpot with cooking spray or a bit of oil.

Add ingredients: Place chicken breasts at the bottom. Pour in the pineapple chunks (with juice), brown sugar, soy sauce, minced garlic, and sliced onion. Stir gently to mix.

Cook:
On Low for 6-7 hours, or
On High for 3-4 hours, until the chicken is tender and cooked through.

Shred or serve whole: Remove the chicken and shred with two forks, or leave whole if preferred.

Thicken the sauce (optional): Mix cornstarch and water, then stir into the sauce. Cook on high for an additional 10–15 minutes until thickened.

Serve: Spoon the chicken and sauce over rice. Garnish with green onions or sesame seeds.
