For the Fried Rice:
3 cups cooked jasmine rice (preferably cold and day-old)
2 tablespoons vegetable oil
3 cloves garlic, minced
1/2 cup chopped onion

Salt and pepper, to taste
2 green onions, sliced (for garnish)

Instructions:
Make the Sauce:
In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey. Set aside.
Prepare the Chicken:
Toss diced chicken with soy sauce and cornstarch until coated.
Heat 1 tbsp oil in a skillet or wok over medium-high heat.
Cook the chicken until golden and cooked through (about 5-7 minutes). Remove and set aside.
Cook the Fried Rice:
In the same pan, add another tablespoon of oil.
Sauté garlic and onion until fragrant and soft (2-3 minutes).
Add mixed vegetables and stir-fry for 2-3 minutes.
Push the veggies to one side, pour in the beaten eggs on the other side, and scramble until cooked through.
Add the cold rice, breaking up any clumps. Stir everything together.
Pour in soy sauce and sesame oil. Stir-fry until evenly combined and heated through.
Add back the cooked chicken and mix well.
Finish with Bang Bang Sauce:
Drizzle in most of the bang bang sauce (reserve a bit for drizzling on top).
Toss to coat everything evenly, then heat for an additional minute.
Serve:
Garnish with green onions.
Drizzle extra Bang Bang sauce on top for extra flavor and spice.
