500g (1 lb) fresh green beans, trimmed and chopped into 1-2 inch pieces

4-5 cloves garlic, finely chopped
1-2 fresh red chilies, finely chopped (adjust to heat preference)
1 tablespoon soy sauce
1 tablespoon oyster sauce (or hoisin sauce for vegetarians)
1 teaspoon rice vinegar (optional, for tang)
1/2 teaspoon sugar (to balance flavors)
Salt, to taste

Optional Garnish:
Toasted sesame seeds
Sliced green onions

Instructions:

Prepare the Green Beans:
Bring a pot of water to a boil and blanch the chopped green beans for 2-3 minutes, until they are bright green but still crisp.
Drain and set aside. (You can skip this step if you prefer extra crunch.)

Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add chopped garlic and chilies, stir-frying for about 30 seconds until fragrant (don’t burn the garlic).
