Strawberry Quinoa Salad


Ingredients:

For the Salad:

1 cup quinoa (uncooked)
2 cups water
1½ cups fresh strawberries, hulled and sliced
½ cup cucumber, diced
¼ cup red onion, finely chopped
¼ cup fresh basil, chopped (or mint, if preferred)
¼ cup crumbled feta cheese (optional)
¼ cup sliced almonds or walnuts (toasted)

For the Dressing:

3 tablespoons olive oil
2 tablespoons balsamic vinegar (or lemon juice)
1 tablespoon honey or maple syrup
Salt and black pepper, to taste

Instructions:

1. Cook the Quinoa:
Rinse the quinoa under cold water.
In a saucepan, combine quinoa and water. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes, or until the water is absorbed and the quinoa is fluffy.
Let it cool completely.

2. Make the Dressing:
In a small bowl or jar, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
