Cobb Salad


Ingredients:

For the Salad:

6 cups Romaine or mixed salad greens, chopped
2 cups Cooked chicken breast, diced or shredded (grilled or roasted)
4 strips Bacon, cooked crisp and crumbled
2 Hard-boiled eggs, peeled and chopped
1 cup Cherry tomatoes, halved
1 Avocado, peeled and diced
1/2 cup Blue cheese, crumbled (or Feta if preferred)
1/2 cup Cucumber, sliced or diced (optional)
2 tablespoons Chopped chives or green onions (optional)

For the Dressing (Classic Red Wine Vinaigrette):

1/3 cup Olive oil
2 tablespoons Red wine vinegar
1 teaspoon Dijon mustard
1 small Garlic clove, minced
Salt and freshly ground black pepper to taste
1/2 teaspoon honey or sugar (optional, to balance acidity)


Instructions:

1. Make the Dressing:

In a small bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, salt, pepper, and honey until well combined.
Shake or whisk well until emulsified. Set aside.

2. Assemble the Salad:

In a large serving platter or salad bowl, arrange the chopped lettuce as the base.
Neatly arrange rows of chicken, bacon, eggs, tomatoes, avocado, blue cheese, and cucumber over the greens.
Sprinkle with chopped chives or green onions if using.

3. Dress and Serve:

Drizzle the vinaigrette over the salad just before serving.
Serve with extra dressing on the side, and toss if preferred.


Tips:

Use leftover rotisserie chicken for a quick version.
You can swap blue cheese with goat cheese or cheddar if desired.
