Here’s a simple and authentic Salmon Nigiri recipe that you can make at home. This classic sushi features a slice of fresh salmon over a small bed of seasoned sushi rice.

Ingredients:
For the Sushi Rice:
1 cup (200g) sushi rice (short-grain Japanese rice)
1¼ cups (300ml) water
2 tbsp rice vinegar
1 tbsp sugar
½ tsp salt
For the Salmon Nigiri:
200g (7 oz) fresh, sushi-grade salmon fillet (skinless)
Wasabi (optional, for a spicy kick)
Soy sauce (for dipping)
Pickled ginger (gari, for serving)
Equipment:
Rice cooker or pot
Wooden sushi bowl (hangiri) or large mixing bowl
Sharp knife (sashimi knife preferred)

Instructions:
1. Prepare the Sushi Rice:
Rinse the sushi rice under cold water until the water runs clear.
Cook the rice in a rice cooker or pot with 1¼ cups water (follow rice cooker instructions if using one).
While the rice cooks, mix rice vinegar, sugar, and salt in a small bowl until dissolved.
Once the rice is done, transfer it to a wooden sushi bowl (or a large bowl). Gently fold in the vinegar mixture while fanning the rice to cool it (this gives the rice a glossy finish).
2. Prepare the Salmon:
Use a very sharp knife to slice the salmon against the grain into ¼-inch (0.6 cm) thick pieces (about 2 inches long).
If desired, place a small dab of wasabi on the underside of each slice (optional).
3. Shape the Nigiri:
Wet your hands with water and a bit of vinegar (to prevent sticking).
Take a small golf ball-sized portion of rice (about 20g) and gently press it into an oblong shape with your fingers.
Place a salmon slice on top and press lightly to adhere.
4. Serve & Enjoy:
Arrange the nigiri on a plate with pickled ginger on the side.
Serve with soy sauce for dipping.
