Here’s a simple and delicious recipe for Spicy Tuna Rolls (a popular sushi roll with a kick!).
Spicy Tuna Rolls Recipe
Makes 4 rolls (about 32 pieces)

Ingredients:
For the Spicy Tuna Filling:
8 oz (225g) fresh sushi-grade tuna, finely chopped
2 tbsp mayonnaise (Japanese Kewpie mayo preferred)
1–2 tbsp Sriracha (adjust to taste)
1 tsp soy sauce
1 tsp sesame oil
1 green onion, finely chopped
½ tsp toasted sesame seeds (optional)
For the Sushi Rice:
2 cups cooked sushi rice (short-grain Japanese rice)
2 tbsp rice vinegar
1 tbsp sugar
½ tsp salt
For Assembly:
4 sheets of nori (seaweed)
½ cucumber, julienned (optional)
1 avocado, sliced (optional)
Soy sauce, pickled ginger, and wasabi for serving

Instructions:
1- Prepare the Sushi Rice:
Mix rice vinegar, sugar, and salt in a small bowl. Microwave for 10–15 seconds to dissolve.
Gently fold the mixture into warm cooked rice. Cover with a damp cloth to keep moist.
2- Make the Spicy Tuna Filling:
In a bowl, combine chopped tuna, mayonnaise, Sriracha, soy sauce, sesame oil, green onion, and sesame seeds. Mix well.
3- Assemble the Rolls:
Place a bamboo sushi mat on a clean surface and cover it with plastic wrap.
Lay a nori sheet (shiny side down) on the mat.
Wet your hands and spread about ½ cup of sushi rice evenly over the nori, leaving a 1-inch strip at the top bare.
Spread a line of spicy tuna (about 2–3 tbsp) horizontally across the rice.
Add cucumber or avocado slices if using.
4- Roll It Up:
Lift the edge of the mat closest to you and roll tightly over the filling.
Squeeze gently to shape, then roll the dough completely. Seal the edge with a little water if needed.
5- Slice & Serve:
Use a sharp, wet knife to cut the roll into 8 pieces.
Serve with soy sauce, wasabi, and pickled ginger.
