Ingredients:

4 boneless, skinless chicken breasts
2 tablespoons olive oil
3 cloves garlic, minced
1 small onion, finely chopped (optional)
1 can (14 oz) crushed tomatoes or 3 large ripe tomatoes, chopped
1/2 cup chicken broth
1/4 cup fresh basil leaves, chopped (plus more for garnish)
1 teaspoon Italian seasoning
Salt and pepper to taste
1/4 teaspoon red pepper flakes (optional)
1 tablespoon balsamic vinegar (optional, for depth of flavor)
Grated Parmesan cheese for serving (optional)

Instructions:

1. Prepare the Chicken:
Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.

2. Sear the Chicken:
Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for 4–5 minutes per side, until golden brown. Remove from the skillet and set aside.

3. SautƩ the Aromatics:
In the same skillet, add a little more oil if needed. SautĆ© the garlic (and onion if using) for 1–2 minutes, until fragrant.

4. Make the Sauce:
Stir in the crushed tomatoes, chicken broth, and balsamic vinegar (if using). Add red pepper flakes if you like a bit of heat. Let the sauce simmer for 5 minutes.

5. Simmer the Chicken:
Return the chicken to the skillet. Cover and cook for another 10–15 minutes, until the chicken is cooked through and the sauce is slightly thickened.

6. Finish with Basil:
Stir in fresh chopped basil and cook for 1 more minute. Taste and adjust seasoning.

7. Serve:
Serve hot, topped with extra basil and Parmesan cheese if desired. Pair with pasta, rice, or crusty bread.
