Best Hummus


Ingredients:

1½ cups cooked chickpeas (or 1 can, drained and rinsed)
¼ cup fresh lemon juice (from 1–2 lemons)
¼ cup tahini
1 small garlic clove, minced
2 tablespoons extra virgin olive oil (plus more for serving)
½ teaspoon ground cumin
½ to 1 teaspoon salt (to taste)
2–3 tablespoons cold water
Optional garnish: olive oil, paprika, chopped parsley, whole chickpeas


Instructions:

1. Blend tahini and lemon juice
In a food processor, combine tahini and lemon juice. Blend for 1 minute until creamy. This step helps create a smoother hummus.

2. Add garlic, cumin, and salt
Add the minced garlic, cumin, and salt. Blend again for 30 seconds.

3. Add chickpeas
Add half of the chickpeas and blend for 1 minute. Scrape down the sides, add the rest, and blend again.

4. Add olive oil and water
While blending, drizzle in the olive oil. Then slowly add cold water, 1 tablespoon at a time, until you get a smooth, light, and creamy texture.

5. Taste and adjust
Add more salt, lemon juice, or garlic as needed.

6. Serve
Spoon into a bowl. Drizzle with olive oil, sprinkle with paprika and parsley. Add a few whole chickpeas in the center if you like.


Tips:

For ultra-smooth hummus, peel the chickpeas before blending.
Use ice water for a fluffier texture.
Tahini quality matters-use a good, smooth, runny tahini for the best flavor.
