Classic Tiramisu


Ingredients:

6 large egg yolks
3/4 cup (150 g) granulated sugar
2/3 cup (160 ml) whole milk
1 1/4 cups (300 ml) heavy cream
8 oz (225 g) mascarpone cheese, softened
1 cup (240 ml) strong brewed espresso or coffee, cooled
1/4 cup (60 ml) coffee liqueur (like KahlĆŗa or Marsala wine-optional)
24-28 ladyfinger cookies (savoiardi)
Unsweetened cocoa powder, for dusting
Dark chocolate shavings (optional, for garnish)

Instructions:

Prepare the custard:
In a medium saucepan, whisk egg yolks and sugar together until well blended.
Whisk in milk and cook over medium heat, stirring constantly, until mixture thickens slightly (about 10 minutes).
Do not let it boil. Remove from heat and let it cool completely.

Whip the cream:
In a large bowl, beat heavy cream until stiff peaks form.
Gently fold in mascarpone cheese until smooth and creamy.
Combine coffee mixture:
In a shallow dish, mix espresso (or strong coffee) with coffee liqueur if using.

Assemble tiramisu:
Quickly dip each ladyfinger into the coffee mixture (do not soak).
Arrange a layer of dipped ladyfingers at the bottom of a 9x13-inch dish (or similar serving dish).
Spread half of the mascarpone mixture over the ladyfingers.
Add another layer of dipped ladyfingers, then top with the remaining mascarpone mixture.

Chill:
Cover and refrigerate for at least 6 hours (overnight is best) to allow flavors to blend.

Serve:
Dust generously with cocoa powder before serving.
Optionally, add chocolate shavings on top.
