California Rolls Sushi
Fresh California Rolls with Crab, Avocado & Cucumber


Ingredients:


2 cups of sushi rice

2 1/2 cups water

1/3 cup rice vinegar

1 tablespoon sugar

1/2 teaspoon salt

5 sheets of nori (seaweed)

1 cup imitation crab sticks or real crab meat, shredded

1 ripe avocado, sliced

1/2 cucumber, julienned

1 tablespoon mayonnaise (optional)

Toasted sesame seeds (for garnish)

Soy sauce, pickled ginger, and wasabi (for serving)

Bamboo sushi mat wrapped in plastic wrap


Directions:

Rinse sushi rice in cold water until the water runs clear. Combine with water in a pot and bring to a boil. Reduce heat, cover, and simmer for 18 minutes. Remove from heat and let sit, covered, for 10 minutes.

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold into the cooked rice. Let the rice cool to room temperature.

Place a sheet of plastic wrap over the bamboo sushi mat. Lay a sheet of nori, shiny side down, on the mat. With wet fingers, spread a thin layer of sushi rice over the nori, then sprinkle with sesame seeds.

Flip the nori over so the rice side is facing down.

Arrange crab, avocado, and cucumber in a horizontal line across the center of the nori. Add a touch of mayo if desired.

Roll the sushi tightly using the bamboo mat, applying gentle pressure to shape it into a firm roll.

Slice the roll into 6-8 equal pieces using a sharp, damp knife. Wipe the blade between each cut for clean slices.

Serve with soy sauce, pickled ginger, and wasabi on the side.
