Egg Masala Curry Recipe
Here’s a flavorful recipe for Egg Masala Curry:

Ingredients:
6 hard-boiled eggs, peeled
2 tablespoons oil (vegetable or sunflower)
1 large onion, finely chopped
2 medium tomatoes, finely chopped or pureed
2 green chilies, slit (optional, for spice)
1 tablespoon ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon garam masala
1/2 teaspoon salt (adjust to taste)
1 cup water (or more for desired gravy consistency)
2 tablespoons fresh cilantro, chopped

Instructions:
1. Prepare the eggs: Make small slits on the boiled eggs so they absorb the curry flavor. You can also lightly fry them in a teaspoon of oil until golden, for extra taste. Set aside.
2. Make the masala base: Heat oil in a pan. Add chopped onions and sauté until golden brown.
3. Add ginger-garlic paste and cook for 1-2 minutes until fragrant.
4. Stir in tomatoes and cook until soft and oil separates from the mixture.
5. Add turmeric, chili powder, coriander powder, and cumin powder. Stir well and cook for another 2-3 minutes.
6. Pour in water and bring the curry to a gentle simmer.
7. Gently place the boiled eggs into the curry. Let it simmer for 5-7 minutes so the eggs absorb the flavors.
8. Sprinkle garam masala and stir gently.
9. Garnish with fresh cilantro.

Serve hot with steamed basmati rice, jeera rice, or roti/naan.
