Olivier Potato Salad Recipe
Here’s a classic recipe for Olivier Potato Salad (also known as Russian Salad).

Ingredients:
4 medium potatoes
3 medium carrots
4 hard-boiled eggs
1 cup cooked chicken breast (or ham, optional)
1 cup frozen peas (thawed)
5-6 small pickles (or gherkins), diced
1 small onion (optional), finely chopped
1 cup mayonnaise
1 tsp Dijon mustard (optional)
Salt and black pepper, to taste
Fresh dill or parsley, for garnish

Instructions:
1. Cook the vegetables:
Peel and dice the potatoes and carrots into small cubes.
Boil them in salted water until just tender but not mushy (about 10- 12 minutes for potatoes, 8-10 minutes for carrots).
Drain and let them cool completely.
2. Prepare the other ingredients:
Dice the cooked chicken breast (or ham) into small cubes.
Peel and dice the hard-boiled eggs.
Dice the pickles into small pieces.
3. Mix the salad:
In a large bowl, combine potatoes, carrots, eggs, chicken (or ham), peas, pickles, and onion if using.
Add mayonnaise and mustard. Mix gently to coat everything evenly.
4. Season:
Taste and adjust seasoning with salt and black pepper.
5. Chill and serve:
Cover and refrigerate for at least 1 hour before serving to let the flavors meld.
Garnish with fresh dill or parsley before serving.

Traditionally, Olivier Salad is enjoyed during celebrations and holidays, especially New Year’s Eve. You can adjust the mayonnaise amount to make it creamier or lighter.
