Ingredients
1 lb (450g) ground beef or ground turkey
1 tbsp olive oil
1 medium onion (chopped)
2 cloves garlic (minced)
1 packet taco seasoning (or homemade mix: cumin, chili powder, paprika, oregano, salt)
1 can (15 oz) black beans (drained and rinsed)
1 can (15 oz) corn kernels (drained)
1 cup salsa (or enchilada sauce)
2 cups shredded cheddar or Mexican cheese blend
6-8 medium flour or corn tortillas
1 can (15 oz) diced tomatoes (drained)
Fresh cilantro and sour cream for garnish

Instructions
1- nCook the filling:
In a skillet, heat olive oil over medium heat.
Add onion and garlic, sauté until softened.
Add ground beef, cook until browned. Drain excess fat.
Stir in taco seasoning, diced tomatoes, black beans, corn, and ½ cup salsa. Let simmer for 5 minutes.
2- Assemble the lasagna:
Preheat oven to 375°F (190°C).
Lightly grease a baking dish.
Spread a thin layer of salsa on the bottom.
Place 2 tortillas to cover the bottom.
Spread a layer of meat mixture, then cheese.
Repeat layers (tortilla → meat → cheese) until ingredients are used, finishing with cheese on top.
3-Bake:
Cover with foil and bake for 20 minutes.
Remove foil and bake another 10 minutes until cheese is bubbly and golden.
4-Serve:
Let cool for 5 minutes, then slice.
