Shrimp Scampi with Linguini


Ingredients:

1 pound (450 g) linguini
1 pound (450 g) large shrimp, peeled and deveined
4 tablespoons unsalted butter
3 tablespoons olive oil
4 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional)
1/2 cup chicken broth
Juice of 1 lemon (about 2 tablespoons)
Zest of 1 lemon
Salt and freshly ground black pepper, to taste
1/4 cup chopped fresh parsley
Grated Parmesan cheese, for serving (optional)

Instructions:

Cook the Linguini:
Bring a large pot of salted water to a boil. Cook linguini according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain.
Cook the Shrimp:
In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat. Add shrimp, season with salt and pepper, and cook for about 2 minutes per side until pink and opaque. Remove and set aside.
Prepare the Sauce:
In the same skillet, add the remaining butter and minced garlic. Sauté for 1 minute until fragrant. Add red pepper flakes and chicken broth, and let it simmer for 2-3 minutes until slightly reduced.
Combine Everything:
Add lemon juice and zest to the sauce. Return shrimp to the pan and toss to coat. Add cooked linguini and a bit of reserved pasta water to loosen the sauce if needed.
Finish and Serve:
Sprinkle with chopped parsley and toss well. Serve immediately with grated Parmesan cheese if desired.
