Chicken Tetrazzini


Ingredients

12 oz (340 g) spaghetti or linguine
2 cups cooked chicken breast, shredded
2 tbsp unsalted butter
1 small onion, finely chopped
2 garlic cloves, minced
1 cup mushrooms, sliced
2 tbsp all-purpose flour
2 cups chicken broth
1 cup heavy cream (or half-and-half for a lighter version)
½ cup grated Parmesan cheese
1 cup shredded mozzarella or cheddar cheese
½ cup frozen peas (optional)
Salt and black pepper, to taste
½ tsp dried thyme (or Italian seasoning)
½ cup breadcrumbs (optional, for topping)

Instructions

1- Cook pasta: Boil spaghetti until al dente, then drain and set aside.

2- Make sauce: In a large skillet, melt butter. Sauté onion, garlic, and mushrooms until soft. Stir in flour and cook for 1 minute. Gradually whisk in chicken broth and cream until smooth.

3- Season: Add salt, pepper, and thyme. Stir in Parmesan cheese until melted.

4- Combine: Add shredded chicken, cooked pasta, peas, and half of the mozzarella/cheddar. Mix well.

5- Bake: Transfer to a greased baking dish. Top with remaining cheese and breadcrumbs (if using).

6- Cook: Bake at 375°F (190°C) for 20-25 minutes, until bubbly and golden.

7- Serve: Let it rest for 5 minutes before serving.
