Ingredients:
1 cup all-purpose flour
1 tsp baking powder
½ tsp salt
½ tsp black pepper
½ tsp paprika (optional, for flavor)
2 large eggs
½ cup milk (or buttermilk for extra flavor)
1½ cups corn kernels (fresh, canned, or frozen and thawed)
¼ cup finely chopped green onions (or chives)
¼ cup grated cheese (cheddar or parmesan, optional)
2 tbsp fresh parsley or cilantro, chopped
Oil for frying (vegetable or canola)

Instructions:
1. Prepare the Batter
In a large bowl, whisk together the flour, baking powder, salt, pepper, and paprika.
In another bowl, beat the eggs and milk. Pour into the dry ingredients and stir until just combined.
Fold in the corn kernels, green onions, cheese (if using), and parsley. The batter should be thick but spoonable.
2. Heat the Oil
In a large skillet, heat about ¼ inch of oil over medium heat until hot but not smoking.
3. Cook the Fritters
Drop heaping spoonfuls of batter into the hot oil, flattening slightly with the back of the spoon.
Fry 2-3 minutes per side until golden brown and crisp.
4. Drain & Serve
Remove and place on paper towels to drain excess oil.
Serve warm with sour cream, spicy mayo, or sweet chili sauce for dipping.
