Ingredients

12 lasagna noodles, cooked and drained
2 cups ricotta cheese
1 ½ cups shredded mozzarella cheese (divided)
½ cup grated Parmesan cheese
1 large egg
2 cups fresh spinach, chopped (optional)
2 cups marinara sauce
2 tsp Italian seasoning
2 garlic cloves, minced
Salt and black pepper, to taste
Fresh basil or parsley, for garnish

1- Cook noodles: Boil lasagna noodles in salted water until al dente. Drain and lay flat on a parchment-lined surface.

2- Make filling: In a bowl, mix ricotta cheese, 1 cup mozzarella, Parmesan, egg, spinach, garlic, Italian seasoning, salt, and pepper until smooth.

3- Assemble rolls: Spread 2-3 tablespoons of filling over each noodle. Roll tightly and place seam-side down in a greased baking dish.

4- Top with sauce: Pour marinara sauce evenly over the rolls. Sprinkle remaining mozzarella on top.

5- Bake: Cover with foil and bake at 375°F (190°C) for 25 minutes. Remove foil and bake for another 10 minutes until bubbly and golden.
