Ingredients:

2 cups elbow macaroni (uncooked)
4 tbsp butter
4 tbsp all-purpose flour
3 cups milk (warm)
2 cups shredded cheddar cheese (or a mix of cheddar & mozzarella)
½ cup grated parmesan cheese (optional)
½ tsp salt (adjust to taste)
½ tsp black pepper
½ tsp paprika (optional, for flavor)
½ cup breadcrumbs (optional, for topping)

Instructions:

1. Cook the Pasta
Boil the macaroni in salted water until al dente (slightly firm).
Drain and set aside.

2. Make the Cheese Sauce
In a saucepan, melt the butter over medium heat.
Whisk in the flour and cook for 1-2 minutes to form a roux (thick paste).
Slowly add warm milk, whisking continuously to avoid lumps.
Cook until the sauce thickens (about 5-7 minutes).

3. Add the Cheese
Stir in shredded cheddar and parmesan until melted and smooth.
Season with salt, pepper, and paprika.

4. Combine Pasta & Sauce
Mix the cooked macaroni into the cheese sauce until fully coated.

5. Optional Baked Version
Preheat oven to 180°C (350°F).
Transfer mac and cheese into a baking dish.
Sprinkle breadcrumbs and extra cheese on top.
Bake for 20 minutes or until golden and bubbly.
