Peanut Butter Chicken Recipe
Here’s a delicious and easy Peanut Butter Chicken recipe you can try at home:

Ingredients:
500g (about 1 lb) boneless, skinless chicken breast or thighs, cut into bite-sized pieces
2 tbsp vegetable oil
1 medium onion, finely chopped
2 cloves garlic, minced
1 tsp fresh ginger, grated
1 red bell pepper, sliced
1 carrot, julienned (optional)
1 can (400ml) coconut milk
3 tbsp peanut butter (smooth or crunchy, unsweetened preferred)
2 tbsp soy sauce
1 tbsp tomato paste (or ketchup for a sweeter taste)
1 tbsp lime juice (or lemon juice)
1 tsp chili flakes (optional, for heat)
Salt and black pepper, to taste
Fresh cilantro, for garnish
Cooked rice or noodles, for serving

Instructions:
1. Prepare the chicken
Season the chicken pieces lightly with salt and pepper.
Heat 1 tbsp oil in a large pan or wok over medium-high heat.
Add chicken and cook until golden brown and just cooked through. Remove and set aside.
2. Make the sauce base
In the same pan, add another tbsp of oil.
Sauté onion, garlic, and ginger until fragrant (about 2 minutes).
Add bell pepper and carrot, cook for another 3-4 minutes.
3. Add the sauce ingredients
Stir in peanut butter, coconut milk, soy sauce, and tomato paste.
Mix until the peanut butter melts into the sauce.
Add lime juice and chili flakes (if using).
4. Combine chicken and sauce
Return cooked chicken to the pan.
Simmer for 5-7 minutes until the sauce thickens and the chicken absorbs the flavors.
5. Taste and adjust
Add more soy sauce for saltiness, more lime juice for tang, or more peanut butter for creaminess.
6. Serve
Garnish with fresh cilantro.
Serve hot over steamed rice or noodles.
