Shepherd’s Pie Recipe
Ingredients:
For the filling:
1 lb (450 g) ground lamb (or beef if preferred)
1 large onion, finely chopped
2 carrots, diced
2 cloves garlic, minced
1 cup peas (fresh or frozen)
1 cup corn (optional)
2 tbsp tomato paste
1 cup beef or chicken broth
2 tbsp Worcestershire sauce
2 tbsp olive oil or butter
1 tsp dried thyme
Salt and black pepper to taste
For the mashed potato topping:
2 lbs (900 g) potatoes, peeled and cubed
4 tbsp butter
½ cup milk (or cream for extra creaminess)
Salt to taste
Optional: ½ cup shredded cheddar cheese for topping

Instructions:
1. Prepare the potatoes:
Boil potatoes in salted water until tender (about 15-20 minutes).
Drain and mash with butter, milk, and a pinch of salt until smooth. Set aside.
2. Cook the filling:
Heat oil/butter in a large skillet.
Add the onion, garlic, and carrots; sauté until they are soft.
Add the ground lamb and cook until it is browned. Drain excess fat if needed.
Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper.
Add broth and simmer for 5-7 minutes until slightly thickened.
Stir in peas and corn. Remove from heat.
3. Assemble:
Preheat oven to 400°F (200°C).
Spread the meat mixture evenly in a baking dish.
Top with mashed potatoes, spreading to cover completely.
(Optional) Sprinkle cheese on top for a golden crust.
4. Bake:
Bake uncovered for 20-25 minutes, until the top is golden and slightly crispy.
5. Serve:
Let it cool slightly before serving. Enjoy warm.
