Ingredients

2 cups cooked chicken, diced or shredded
1 cup carrots, diced
1 cup peas (fresh or frozen)
1 cup potatoes, diced and cooked
1 small onion, chopped
3 tbsp butter
3 tbsp all-purpose flour
2 cups chicken broth
1 cup milk or cream
1 tsp dried thyme (or 2 tsp fresh thyme)
Salt and black pepper, to taste
1 refrigerated or homemade pie crust (top layer)
1 egg, beaten (for egg wash)

Instructions

Prepare filling: In a large skillet, melt butter over medium heat. Add onion, carrots, and potatoes. Cook 5-7 minutes until softened.
Make sauce: Stir in flour and cook for 1 minute. Slowly whisk in chicken broth and milk until smooth. Simmer until thickened.
Add chicken and peas: Stir in cooked chicken, peas, thyme, salt, and pepper. Remove from heat.
Assemble pie: Pour filling into a greased baking dish or pie plate. Cover with pie crust, sealing the edges. Cut a few small slits on top for steam to escape.
Bake: Brush with egg wash and bake at 400°F (200°C) for 30–35 minutes until golden brown.
Serve: Let rest for 10 minutes before serving.
