Good Eats Roast Turkey


Ingredients:

1 (14-16 pound) turkey (frozen is fine, thaw completely before cooking)
1 gallon vegetable broth (or chicken broth)
1 cup kosher salt
½ cup brown sugar
1 tablespoon black peppercorns
1 ½ teaspoons allspice berries
1 ½ teaspoons candied ginger
1 gallon of ice water

For roasting:

1 red apple, sliced
½ onion, sliced
1 cinnamon stick
1 cup water
4 sprigs fresh rosemary
6 leaves fresh sage
2-3 tablespoons canola oil

Instructions:

1. Prepare the Brine
In a large pot, combine broth, salt, sugar, peppercorns, allspice, and ginger.
Bring to a boil, stirring to dissolve the salt and sugar. Remove from heat and let cool.
In a large cooler or container, place the thawed turkey. Add brine and ice water, ensuring the turkey is completely submerged.
Cover and refrigerate (or keep chilled) for 8-16 hours.

2. Preheat Oven & Prepare Turkey
Preheat oven to 500°F (260°C).
Remove the turkey from the brine and rinse it inside and out with cold water. Pat dry with paper towels.
Place apple, onion, cinnamon stick, and 1 cup of water in a microwave-safe dish. Heat on high for 5 minutes, then add to the turkey cavity along with rosemary and sage.
Tuck the wings under the bird and brush the skin with canola oil.

3. Roast the Turkey
Place the turkey breast-side up on a roasting rack inside a roasting pan.
Roast at 500°F (260°C) for 30 minutes.
Reduce oven to 350°F (175°C) and roast until the thickest part of the breast reaches 155°F (68°C) on a meat thermometer (about 2-2½ hours total cooking time).
Remove from oven, tent with foil, and let rest for 15-20 minutes before carving.
