Spanish-style chickpeas


Ingredients

2 tablespoons olive oil
1 medium onion, finely chopped
3 garlic cloves, minced
1 red bell pepper, diced
1 teaspoon smoked paprika (pimentón)
½ teaspoon ground cumin
1 pinch chili flakes (optional)
2 medium tomatoes, grated or 1 can (400 g/14 oz) chopped tomatoes
2 cans (400 g/14 oz each) chickpeas, drained and rinsed
1 cup vegetable broth (or water)
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)

Instructions

1. Sauté the base
Heat olive oil in a large skillet or saucepan over medium heat. Add onion and cook for 5 minutes until soft.
Stir in garlic and bell pepper, cooking for another 2-3 minutes.

2. Add spices
Sprinkle in smoked paprika, cumin, and chili flakes. Stir well to release their aroma (about 30 seconds).

3. Tomato base
Add grated fresh tomatoes or canned tomatoes. Cook for 8-10 minutes, stirring occasionally, until the sauce thickens and the tomatoes lose their raw taste.

4. Chickpeas
Add chickpeas and stir to coat them in the sauce. Pour in vegetable broth. Season with salt and pepper.

5. Simmer
Reduce heat and simmer gently for 15-20 minutes, allowing the flavors to meld together. If the mixture gets too thick, add a splash of water.

6. Finish & serve
Taste and adjust seasoning. Garnish with fresh parsley before serving.
